I thought I would post these real quick before heading home to no-net-land.
First up....
Chicken Quesadillas
You will need:
Low fat tortillas, I prefer the 1pt ones myself
1/4c low fat cheese
1/2c cooked chicken cut into chunks
Go ahead and preheat your grill while you get your supplies ready.
All you do is place your tortilla on the grill, sprinkle with cheese, place chicken down and then fold the tortilla in half. Let it cook for a few minutes then flip, both sides end up golden. Next time I plan to put some onions, green peppers and mushrooms in for some filler.
Serving size 1, Points 4pts
*And the kids loved them with just cheese, I love meals that please all!*
Diet Coke Sloppy Joes
Just round up:
96% lean ground beef
1c diet coke (or pepsi)
10tbsp Ketchup
1tbsp Worcestershire sauce
2tbsp white vinegar
2tsp dry mustard
Brown ground beef in skillet. Drain beef and add back to skillet. Add remaining ingredients and stir well. Cook on low for 30 minutes uncovered so sauce can thicken. You can also add onions or green peppers if you'd like. Makes 4 servings @ 3pts per serving. Just add a whole wheat bun + a side of fresh fruit and you have a quick easy, family friendly meal.
Lastly who does not LOVE dessert? Well here is a simple recipe to satisfy:
Spiced-Apple Hobo Pack
3 large red or green baking apples cored and cut into rings
2tbsp Brown Sugar
1/4tsp Apple Pie spice
1 tbsp butter cut up
3 2-3" cinnamon sticks
Fold a 36x18" piece of heavy aluminum foil in half to make an 18" square. Put your apple slices in the center. Combine your brown sugar and apple pie spice then sprinkle over top. Dot with butter and scatter the cinnamon sticks throughout. Bring up the foil edges and seal with a double fold. Make sure to leave room for steam to build! With a gas grill you want to place it over medium heat for 20-25 minutes. Discard the cinnamon sticks before serving. Makes 4 servings @ 3pts each. I must say this is DELISH over a serving of frozen vanilla ice cream.
